Braquier sugared almonds from Verdun

Braquier sugared almonds from Verdun

In France, no wedding, christening or first communion would be complete without its sugared almonds ! How did this small confectionery come to symbolise celebrations ? To find out, head for Verdun, the birthplace of the sugared almond.

Sugared almonds are the oldest confectionery in France. They were first made in 1220 by an apothecary in Verdun who was looking for a way of preserving and transporting the almonds he used in his preparations.

Initially popular for their curative and digestive properties, they became famous for their ability to increase fertility, hence their appearance at meals celebrating family events in France – weddings, christenings, first communions etc. From the 16th century onwards, they were to be found on the tables of princes.

A number of famous consumers have added to the almonds’ reputation, among them Napoleon Bonaparte, President Carnot, H.M. King Edward VII, H.R.H. the Prince of Wales, their majesties the King and Queen of the Belgians and General Charles de Gaulle.

Nowadays you can visit the Braquier factory in Verdun and find out all there is to know about the famous confectionery !

Founded in 1783, the Braquier company has always handed the original recipe for sugared almonds on from one generation to the next. The key to the quality of their sugared almonds is the rigorous selection of the nuts from Italy and Spain. Sometimes, the confectionery is made with hazelnuts, nougatine, chocolate, liqueur or marzipan instead of almonds.

Throughout the year, from Monday morning to Friday lunchtime, visitors are shown the production process using old copper turbines, including the sorting of the almonds and the application of the two coatings (gum arabic and sugar). The tour ends with a visit to the tiny museum and the factory
