After training with a number of foie gras producers in South-West France, Pascal Bouchot set up his own farm in Méligny-le-Grand in 1988.
He buys day-old ducklings and raises them for 13 weeks before fattening them up with whole grains of corn. The ducks live in a large grassy field with shady areas. His wife, Catherine Bouchot, prepares the foie gras, duck breasts, sausage, sausages, potted duck, pâtés etc.
